Butternut Squash & Apple Gratin

1 butternut squash, peeled, seeded and sliced (make sure your knife is pretty sharp, cut the squash in half lengthwise, then peel with a vegetable peeler, and scoop out the seeds, then slice like you would a potato)
4 apples, peeled, cored, and sliced (or chopped)
½ onion, thinly sliced
2 tablespoons corn starch
Pinch of cinnamon
Pinch of salt
1 cup of chicken or vegetable stock
1 cup of cheddar cheese (I used fat free)
- Preheat oven to 350.
- Place the squash, apples and onion slices into a large plastic bag, or a large bowl, add the corn starch, cinnamon, and salt, shake or stir to coat.
- Grease a 9X13” pan, place half of the squash, apples and onion in the pan, top with half of the stock and half of the cheese. Place the other half of the squash, apples and onion on top and pour the rest of the stock over it.
- Cover with foil and bake for 45 – 60 minutes or until squash and apples are cooked. Remove foil, top with remaining cheese and bake an additional 5-10 minutes or until cheese is melted. Allow to stand for 10-15 min.
