Sauteed Spaghetti Squash (with adjustments from www.allrecipes.com)
1 Spaghetti squash
1 small onion
1 teaspoon garlic
1 teaspoon basil
2 tablespoons of Parmesan Cheese (optional)
- Cook the spaghetti squash, you can bake it by slicing it in half and placing it in a shallow dish with a little water, covered for about 30-45 minutes at 350, or leave it whole, poke some holes in it and microwave it for 10 minutes. If you microwave it, you will want to let it sit for at least 15 minutes after its done. Once it’s sat, cut it in half, on the equator, and using a fork, scoop out the seeds, then scoop out the squash.
- In a frying pan sprayed with nonstick spray, or drizzled with a little EVOO, sauté onion till translucent, about 5 minutes on medium heat.
- Add spaghetti squash and sauté till squash is your desired colored, just a few minutes more.
- Add garlic, basil, and parmesan cheese, toss to coat. Serve.
